Almond Jelly

Preparation time: 5 min
Cook time: 5 min (not including 1-4 hour setting time)
Total time: 10 minutes
Servings: 3-4

Ingredients:

  • 2 cups unsweetened original almond milk
  • 1 Tbs gelatin powder or 1 2/3 tsp agar agar powder
  • 4 Tbs sugar
  • 1 tsp almond extract
  • 2 cups ripe or canned peaches (or any preferred fruit)

Instructions:

  1. In a small pot, add 1 cup almond milk and mix in gelatin or agar agar. Stir until partially dissolved. Bring to a boil, stirring until completely dissolved.
  2. Add sugar and almond extract and stir until dissolved.
  3. Add the remaining 1 cup almond milk. Strain the mixture into an 8”x8” baking pan or glass dish.
  4. Let cool, then refrigerate for about 1 hour for pudding texture or 3-4 hours for firm jelly.
  5. Cut into squares and serve with fruit.
