Breakfast Burrito Recipe

Ingredients:

  • 4 tbsp olive oil, divided
  • 1 cup onion
  • 1 red bell pepper, diced
  • 1 can low-sodium black beans, drained and rinsed
  • 4 whole eggs
  • 4 egg whites
  • ¼ cup shredded cheddar cheese
  • 4 whole wheat tortillas (6-8 inches wide)
  • ⅓ cup fat-free plain Greek yogurt
  • ¼ cup mild salsa
  • 1 avocado, diced
     

Instructions:

  1. Heat 2 tbsp olive oil in a large nonstick frying pan over medium heat.
  2. Add onions and peppers and sauté until onions are soft and peppers are lightly charred, about 7-8 minutes.
  3. Add black beans and cook until warmed, about 3 minutes.
  4. Season with salt and pepper and transfer to a plate.
  5. In a mixing bowl, whisk the whole eggs and egg whites and add cheese.
  6. Heat the remaining 2 tbsp olive oil in the pan over medium-low heat and add egg mixture, scrambling until cooked through, about 3 minutes.
  7. In a small bowl, mix Greek yogurt and salsa. Divide yogurt mixture evenly between tortillas and layer with black beans, veggies, eggs and avocado.
  8. Roll up burrito style and serve.
