Easy Lentil Soup Recipe

Total time: 40 minutes
Servings: 2-3

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • ¾ cup green or brown lentils
  • 4 cups low-sodium vegetable broth
  • ¼ tsp thyme
  • 1 bay leaf

Instructions:

  1. Heat a large saucepan over medium heat. Sauté onion and carrot until onion is translucent, about 5 minutes.
  2. Add remaining ingredients and bring soup to a boil. Lower heat and simmer for about 30 minutes, until lentils are soft. Remove bay leaf and serve.
