Healthy Chocolate Mousse Recipe with Tofu & Cocoa Powder

Ingredients:
- 6 oz (one box) Mori-Nu silken-firm or extra-firm tofu (the shelf-stable kind in the Asian aisle)
- ¾ tsp cocoa powder
- ¾ cup chocolate chips (use stevia-sweetened chips for lower-sugar option; Lily’s brand is one example)
- ½ tsp pure vanilla extract
- 1 tbsp milk of choice
- Pinch of salt
- 3 tsp maple syrup (optional; taste before adding and add one at a time, tasting in between)
Instructions:
- Melt the chocolate, either on the stove or in the microwave.
- Add chocolate and remaining ingredients to a Magic Bullet or food processor and blend until smooth.
- Taste and adjust sweetener accordingly.
- Serve with fresh berries for a high fiber dessert.
