Easy Rice Porridge Recipe
Preparation time: 5 minutes
Cook time: 20 minutes (not including rice cooking time)
Total time: 25 minutes

Ingredients:
- 2.5 cups cooked rice
- 4 cups water
- 1 cup shredded rotisserie chicken (or cooked ground chicken)
- 1 cup frozen peas and carrots
- 2 eggs
- ½ Tbs soy sauce
- 2 tsp sesame oil
- 1/8 tsp black pepper
- 4 sheets roasted nori, crumbled (optional)
- Salt to taste
Instructions:
- In a small pot, add cooked rice and water, and cook on medium heat. When the water comes to a boil, reduce heat to low for about 10 minutes until most of the water has evaporated.
- Add frozen peas and carrots. Once porridge has reached the desired consistency, add chicken and stir.
- Stir in eggs for about a minute until evenly mixed.
- Remove from heat and add soy sauce, sesame oil, salt, and black pepper. Top with crumbled nori (optional).
Vegan alternative: Use silken soft tofu instead of eggs and chicken.
