Easy Rice Porridge Recipe

Preparation time: 5 minutes
Cook time: 20 minutes (not including rice cooking time)
Total time: 25 minutes
Servings: 2

Ingredients:

  • 2.5 cups cooked rice
  • 4 cups water
  • 1 cup shredded rotisserie chicken (or cooked ground chicken)
  • 1 cup frozen peas and carrots
  • 2 eggs
  • ½ Tbs soy sauce
  • 2 tsp sesame oil
  • 1/8 tsp black pepper
  • 4 sheets roasted nori, crumbled (optional)
  • Salt to taste

Instructions:

  1. In a small pot, add cooked rice and water, and cook on medium heat. When the water comes to a boil, reduce heat to low for about 10 minutes until most of the water has evaporated.
  2. Add frozen peas and carrots. Once porridge has reached the desired consistency, add chicken and stir.
  3. Stir in eggs for about a minute until evenly mixed.
  4. Remove from heat and add soy sauce, sesame oil, salt, and black pepper. Top with crumbled nori (optional).

Vegan alternative: Use silken soft tofu instead of eggs and chicken.
