Macaroni & Alfredo Sauce with Greek Yogurt

Ingredients:
- 1 lb elbow macaroni
- 1½ cups whole-milk Greek yogurt
- ½ cup freshly grated Parmesan cheese, plus more for serving
- 3 tbsp minced garlic
- ¼ cup chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Bring 8 cups of salted water to a boil. Add pasta and cook per package instructions. Reserve 1 cup cooking liquid, then drain.
- Whisk together yogurt, ½ cup Parmesan, garlic and parsley. Pour sauce over pasta and toss to combine. Slowly whisk in cooking liquid, 1 tbsp at a time, until desired consistency is reached. Add salt and pepper to taste.
- Top with more Parmesan to taste and serve immediately.
