Easy Shrimp Scampi

Ingredients:
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 shallot, minced
- 8 oz linguini (can use whole wheat, gluten free or legume-based)
- ½ tsp salt
- ½ tsp pepper
- ½ tsp red pepper flakes
- 1 pound shrimp (frozen or pre-cooked is ok)
- 2 heads broccoli, chopped
- 12 oz fresh spinach
- Parmesan cheese, for topping (optional)
Instructions:
- Bring large pot of salted water to a boil. Add linguini and cook until al dente. Drain, reserving ½ cup of cooking water. Set pasta aside in a bowl, covering with pan lid to keep warm.
- Add olive oil to the pot that you cooked the pasta in. Heat over medium heat then add garlic, shallot, salt, pepper, and red pepper flakes and cook until shallot is translucent, about 3-5 minutes.
- Add shrimp + reserved pasta water to pot, increasing heat to medium-high, and stir to cook until shrimp are bright pink and internal temperature reaches 140° F (if using pre-cooked shrimp, do not need to check temperature).
- Add chopped broccoli to pot and stir to cook until fork-tender and bright green.
- Stir in spinach to pot and allow to wilt.
- Arrange in serving bowl and top with parmesan and additional red pepper flakes, if desired.
