Easy Vegetable Brown Fried Rice

Ingredients:

  • 1 Tbs sesame oil 
  • ½ cup red onion, diced 
  • 1 tsp garlic, minced 
  • ½ cup frozen peas 
  • ½ cup diced carrots 
  • ½ block extra firm tofu, crumbled (1/2 package)  
  • 2 ½ cups cooked brown rice 
  • 2 Tbs soy sauce 

Instructions:

  1. Cook brown rice according to package instructions 
  1. Heat a large pan over medium-high heat. Add sesame oil and saute onions, garlic, peas, carrots, and crumbled tofu until onions are tender and translucent 
  1. Add cooked brown rice and soy sauce, then cook for 5-8 minutes while stirring. 
  1. Remove from heat and serve
