Miso Marinated Black Cod
Preparation time: 10 minutes (not including 2 days marinade time)
Cook time: 20 minutes
Total time: 30 minutes
Servings: 4
Ingredients:
- 4 fillets of sablefish or black cod (~4-6 oz per filler, skin on)
- 2 tsp kosher salt
- 2 Tbs sake (to clean fish and remove odor)
For Miso Marinade:
- 6 tbs white miso
- 3 Tbs mirin
- 3 Tbs sake
- 1 Tbs sugar
Instructions:
- Sprinkle salt over the fillets of fish and set aside for 30 minutes.
- In a separate container, combine white miso, mirin, sake, sugar and mix.
- Pour 2 Tbs sake over the fish to rinse off the salt. Pat dry with a paper towel.
- Add fish to the container with marinade and coat both sides with the marinade. Cover container and refrigerate for 2 days.
- When ready to cook, preheat oven to 400◦F. Remove fish from marinade and brush off the marinade with your hands. Do not rinse or use a paper towel.
- Place fish skin side up on a baking sheet lined with aluminum foil or parchment paper. Bake for 20 minutes or until the skin is blistered and browned.
- Carefully serve fish using a spatula and remove any burnt miso from fish.
