Sweet and Silky Tofu Pudding

Ingredients:
- 1 package of silken tofu
- 1 cup water
- 1/3 cup cane or rock sugar
- 1 fresh ginger root
Instructions:
- Cut ginger in half lengthwise to expose more ginger. Add ginger, water, and sugar to a small pot.
- Set heat to medium and bring mixture to a boil for 5 minutes until sugar dissolves and the ginger is fragrant. Remove the pot from heat and let cool.
- Scoop silken tofu into a bowl and pour the hot syrup mixture over the tofu. Serve and enjoy.
