5-Minute Mashed Cauliflower

Ingredients:

  • 2 (12 oz) packages frozen, plain riced cauliflower (Trader Joe’s has a good option)
  • ¼ cup vegetable broth (more as needed)

Instructions:

  1. In a pot, steam cauliflower rice according to package directions.
  2. Add cooked cauliflower rice to a blender with vegetable broth and blend, stopping periodically to scrape down the sides of the blender.
  3. If too thick, add additional vegetable broth, 1 tablespoon at a time, until desired consistency is reached.
