Chickpea Avocado Salad
Preparation time: 15 minutes
Servings: 4 - 5
Ingredients:
- 2 x 14 oz cans chickpeas, rinsed and well drained
- 1 English cucumber, cut into bite-size pieces
- 2 avocados, diced
- ¼ cup onion (your choice), minced
- ½ cup cilantro, parsley and/or dill and/or cilantro, finely chopped
- 1 lemon or lime juice
- 3 tablespoons of olive oil
- ½ to 1 teaspoon cumin, to taste
- ½ to 1 teaspoon salt, to taste
- Black pepper, to taste
Instructions:
Mix chickpeas, cucumber, avocados, onion and fresh herbs in a large bowl. Mix olive oil, lemon or lime juice, cumin, salt and pepper in a small bowl and whisk. Pour dressing over salad and stir gently. Serve cold.
To add more protein, add chicken, tuna, salmon or hard-boiled egg.
