Sweet Red Bean Soup

Preparation time: 5 minutes
Cook time: 90 minutes (with Instant Pot)
Total time: 95 minutes
Servings: 4

Ingredients:

  • 1 cup red adzuki beans
  • 5-6 cups water
  • ¼ tsp sea salt
  • ½ cup brown or coconut sugar
  • 1 Tbs white tapioca pearls (optional)
  • Coconut milk (optional)

Instructions:

  1. Rinse red adzuki beans and place in the Instant Pot with 5 cups of water. Cook on high pressure for 45 minutes and let naturally release for 10-15 minutes.  
  1. Open the lid and stir in sugar and salt and tapioca pearls (optional). Press saute function and let simmer, while stirring, for 15-20 minutes or until tapioca turns translucent.  
  1. Turn off heat and add coconut milk (optional) before serving.
