Sweet Red Bean Soup

Ingredients:
- 1 cup red adzuki beans
- 5-6 cups water
- ¼ tsp sea salt
- ½ cup brown or coconut sugar
- 1 Tbs white tapioca pearls (optional)
- Coconut milk (optional)
Instructions:
- Rinse red adzuki beans and place in the Instant Pot with 5 cups of water. Cook on high pressure for 45 minutes and let naturally release for 10-15 minutes.
- Open the lid and stir in sugar and salt and tapioca pearls (optional). Press saute function and let simmer, while stirring, for 15-20 minutes or until tapioca turns translucent.
- Turn off heat and add coconut milk (optional) before serving.
