Teriyaki Tofu

Ingredients:
- 1 pack (14 oz) of medium firm tofu
- 1/3 cup potato starch or corn starch
- 2 Tbs cooking oil
- 2 Tbs sake
- 2 Tbs mirin
- 2 Tbs soy sauce
- 1 green onion or scallion for garnish (optional)
- Pickled red ginger for garnish (optional)
Instructions:
- Remove tofu from package, wrap with a paper towel, and place between two plates. Put a heavy object on top to drain the liquid for 20 minutes.
- In a bowl, combine sake, mirin and soy sauce. Set aside.
- Remove paper towel from tofu and cut tofu lengthwise into 12 rectangular pieces (1/2 inch thick). Then cut crosswise into squares (1/2 inch thick).
- Place potato starch or corn starch in a tray and coat the tofu pieces with starch.
- Heat a nonstick frying pan on high heat and add cooking oil to the pan when hot.
- Add the tofu and lower the heat. Pan fry over low heat for about 5-7 minutes on each side until golden brown.
- When both sides are cooked, pour teriyaki sauce into the pan. Flip tofu and even coat tofu with sauce.
- Remove tofu from heat and add red ginger or sliced green onions for garnish in a bowl. Serve immediately.
